Chia Pudding
- 1/2 cup chia seeds
- 1 cup almond milk plain or vanilla
- 1 cup coconut milk light or regular
- 4 tsp honey or maple syrup
- 1/2 tsp vanilla extract
Compote
- 4 cup frozen mixed berries
- 1 1/2 tbsp honey or maple syrup
- 1/2 lime
Toppings
- 1/4 cup berries fresh
- 2 tbsp chia seeds
In a medium bowl, stir together chia seeds, almond milk, coconut milk, vanilla extract and honey or maple syrup until combined.
1/2 cup chia seeds, 1 cup coconut milk, 4 tsp honey, 1/2 tsp vanilla extract, 1 cup almond milk
Cover and place in the refrigerator to chill for at least 2 hours, up to overnight (longer is better - if you can prepare the night before, that’s what we’d recommend).
Add berries for the compote to a saucepan over medium-high heat.
4 cup frozen mixed berries
Stir until the berries break down and bubble, then stir in lime juice and honey or maple syrup. Use a fork to mash up any berries that are still whole. Remove from heat and cool completely (place in a bowl in the freezer to speed up the process).
1/2 lime, 1 1/2 tbsp honey
Fill 4 bowls or glasses with equal amounts of the berry compote, and then top with equal amounts of the chia seed pudding.
Garnish with fresh berries and chia seeds and serve 🍓
