Add two eggs to a small bowl and lightly whisk together. Set aside.

Peel and finely dice half of an onion.

Remove the seeds from half a yellow pepper and finely dice.

Peel and mince two cloves of garlic.

Peel and dice carrots until you have 3/4 cup.

Wash and slice enough mushrooms until you have 1/2 cup.

Slice enough green onions until you have 1/2 cup.

In a medium bowl, whisk together all of the ingredients for the sauce. Set aside.
1 1/2 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp mirin, 2 tsp honey, 1 tsp ginger paste, 1/2 tsp sesame oil, 1/4 tsp black pepper
Slice the meat against the grain into thin strips. Add to a separate bowl with 2 Tbsp of the sauce. Toss to coat and set aside.

Heat sesame oil for the eggs in a wok or large skillet over medium-high heat. Add whisked eggs and cook, stirring gently until softly scrambled. Remove to a plate and set aside.

In the same pan, add 2 tsp oil for the fried rice. Once hot, sear steak slices for about 3 minutes per side. Remove to a plate and set aside.

Add 2 tsp oil to the pan again, and let it heat over medium heat. Once hot, add onions, peppers, and garlic, cooking for about 2 to 3 minutes until softened. Stir in peas, carrots, broccoli, and mushrooms. Cook for about 1 to 2 minutes until warmed through.
3/4 cups frozen peas, 3/4 cups broccoli florets
Stir in remaining sauce and chilled rice. Increase heat to medium-high. Cook until the rice is brown from the sauce and most of the liquid has been absorbed.

Reduce heat to medium and add beef, eggs, green onion, and spinach. Toss to coat. Cook until heated through and spinach is wilted, about 2 minutes.
