Caprese Chicken Saltimbocca

- 2 chicken breast boneless, skinless
- 2 clove garlic or 2 tsp garlic paste
- 1 cup basil more for garnish
- 3 oz prosciutto 4 thin slices
- 1/3 cup flour all purpose, gluten-free
- 3 tbsp olive oil extra virgin
- 2 cups cherry tomatoes halved
- 8 oz mozzarella we recommend ciliegine mozzarella balls
- balsamic glaze optional
- kosher salt
- black pepper freshly ground
Slice the chicken breasts in half horizontally (unless you are already using cutlets). Set aside.

Peel and finely grate garlic to make a paste. Set aside.

Cut cherry tomatoes in half. Set aside.

Place flour in a shallow bowl. Set aside.

Rub chicken cutlets with grated garlic. Season on both sides with salt and pepper. Press 2 basil leaves on top of each cutlet. Wrap each cutlet with 2 pieces of prosciutto, wrapping tightly so the basil is secured.

Add olive oil to a large skillet over medium-high heat. When the oil is shimmering, add prepared chicken cutlets. Cook until the bottom is browned, about 3 to 4 minutes. Carefully flip the chicken and cook until the other side is golden brown, about 3 to 4 minutes.

Remove from skillet to serving plate and season with salt, if desired.
Top chicken with cherry tomatoes, mozzarella balls, and freshly chopped basil leaves as desired. Drizzle with balsamic glaze, if using. Serve.
