Immune-Boosting Citrus Salad with Microgreens

Dressing
- 1/3 cup champagne vinegar
- 1 tsp Dijon mustard
- 2 tsp honey
- 1 clove garlic minced
- 2/3 cup olive oil extra virgin
- kosher salt
- black pepper freshly ground
Salad
- 4 oz arugula
- 3 to 4 oranges thinly sliced (we like to use a combination of navel and cara cara)
- 1 red grapefruit thinly sliced
- 4 figs sliced
- 1/2 fennel bulb thinly sliced
- 1/3 cup microgreens
- 2 Tbsp mint leaves chopped
- 1/4 cup sliced almonds
In a small bowl, whisk together champagne vinegar, dijon mustard, honey, garlic, and extra-virgin olive oil until combined.

Season dressing with salt and pepper to taste. Refrigerate until ready to serve.

Arrange arugula on a serving platter or plate. Place the citrus slices on top as desired.

Top arugula with slices of figs and fennel. Sprinkle microgreens, mint leaves and almonds on top.

Drizzle salad with desired amount of dressing and season with additional salt and pepper, to taste.
