Dressing
- 1/4 cup red wine vinegar
- 1/4 cup olive oil extra virgin
- 1 tbsp honey
- 1/2 cup basil packed
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp black pepper freshly ground
Fruit
- 1 1/2 lb peach roughly 3-4 peaches
- 1/2 lb sweet cherries roughly 2 cups
Salad
- 1 lb burrata cheese
- 1/3 cup pistachios roasted
- sea salt flakey, if possible
- red pepper flakes optional
- whole grain bread sliced, optional
Preparing the Salad
Set out the burrata to bring it to room temperature. This is crucial to getting the cheese to be the right consistency for the salad.
1 lb burrata cheese
Wash and prep the produce. Thinly slice the basil leaves, zest the lemon, slice the peaches into wedges and cut the cherries in half.
1/2 cup basil, 1 tsp lemon zest, 1 1/2 lb peach, 1/2 lb sweet cherries
In a small bowl, vigorously whisk together the ingredients for the dressing until well combined.

Add peaches, cherries, and dressing to a large bowl. Drizzle with enough dressing to lightly cover and toss to coat the fruit.
Let the fruit marinate for 30 minutes at room temperature.
Assembling the Salad
When it's reached room temperature, tear the burrata into pieces and arrange the pieces on a serving platter.

Top the cheese with marinated fruit.
Sprinkle pistachios and flaky sea salt on top. For an extra kick, add red pepper flakes if desired. Serve with additional dressing on the side to taste.

Whole Wheat Croutons (optional)
If adding whole wheat croutons, preheat the oven to 375°F and slice bread into cubes. Please note that croutons are not included in the nutrition fact calculations for this recipe.

Put the cubes in a medium bowl, and drizzle with olive oil. Use your hands to toss.
Spread the seasoned bread cubes in a single layer on a baking sheet. Bake in the preheated oven for 10-15 minutes, or until the croutons are golden brown and crispy. Stir them halfway through baking to ensure even toasting.
Remove the baking sheet from the oven and let the croutons cool completely. Store them in an airtight container at room temperature for up to a week.
