Cinnamon Thyme Simple Syrup
- 1/2 cup sugar
- 1/2 cup water
- 4 sprig thyme
- 1 stick cinnamon
Mocktail Ingredients
- 1/4 cup apple juice
- 6 oz sparkling water
Simple Syrup
In a small saucepan, bring sugar and water to a boil. Once sugar is dissolved, remove from heat.

Add cinnamon stick and thyme. Let steep for 10 minutes.

Strain out the cinnamon stick and thyme sprig, then let the simple syrup cool completely before using in the mocktail.
Mocktail
Pour apple juice and simple syrup in a cocktail mixing glass filled halfway with ice.
1/4 cup apple juice
Stir gently to combine and strain into cocktail glasses with ice.
Top cocktails with equal amounts sparkling water and gently stir.
