Ingredients
  

  • 1/2 cup black glutinous rice also called black sweet rice
  • 1 1/2 cup water
  • 3/4 tsp Himalayan pink salt
  • 2/3 cup coconut cream
  • 2 tbsp maple syrup or honey
  • 1 mango ripe
  • mint sprig

Instructions
 

Stovetop Instructions

  • Rinse the rice under cold water. Drain out any excess water.
    1/2 cup black glutinous rice
  • Add rice, 1/4 tsp Himalayan pink salt, and water to a saucepan. Bring to a boil over high heat.
  • Lower heat and simmer for 20 minutes until the rice is tender and the sauce has thickened into a rich sauce.
  • While rice is simmering, wash and dice the mango.
  • Remove from heat and cover for 10 minutes. Stir in syrup or honey until combined.
    2 tbsp maple syrup
  • While the rice is resting, add cream and remaining salt to a different saucepan. Simmer together for about 3 to 5 minutes, until thickened slightly.
    2/3 cup coconut cream, 3/4 tsp Himalayan pink salt
  • Serve rice with salted coconut cream and freshly chopped mango. Garnish with a mint sprig.

Instant Pot Instructions

  • Rinse the rice under cold water. Drain out any excess water.
  • Add rice, water, and 1/4 tsp Himalayan pink salt to the insert of the Instant Pot. Cook on High pressure for 15 minutes. Let pressure naturally release for 7 minutes.
    1/2 cup black glutinous rice, 1 1/2 cup water
  • Manually release any remaining pressure.
  • Stir in syrup or honey until combined.
    2 tbsp maple syrup
  • While the rice is doing its natural release, simmer the cream and remaining salt together in a saucepan over medium heat until thickened, about 3 to 5 minutes.
    2/3 cup coconut cream, 3/4 tsp Himalayan pink salt
  • Serve rice with salted coconut cream and freshly chopped mango. Garnish with a mint sprig.

Notes

Recipe Notes:
  • Make sure that you purchase black glutinous rice (also labeled black sweet rice) to create this sticky rice pudding. Regular black rice will not produce the same result.
