- 1 lb lean ground beef 90/10
- 1 yellow onion medium
- 3 clove garlic
- 1 red bell pepper
- 28 oz tomato diced
- 3 cups beef broth low sodium, or vegetable broth
- 1 sweet potato large, or 2 medium
- 14 oz black beans
- 14 oz adzuki beans can substitute kidney beans
Spices
- 1/4 tsp cayenne pepper optional
- 2 tsp chili powder
- 2 tsp cumin ground
- 1/2 tsp oregano dried
- 1 tsp smoked paprika or regular paprika
- 1 tsp salt
Optional Garnish
- avocado sliced
- cheddar cheese shredded
- jalapeño sliced
- Greek yogurt plain, or sour cream
- cilantro chopped
Prepare the Ingredients
Peel and dice the yellow onion, garlic cloves, and sweet potatoes.

Wash and dice the cilantro and red bell pepper.

Drain and rinse the black beans and adzuki beans.

Making the Chili
Add the olive oil to a large pot over medium heat.

Once hot, add the ground beef and cook until browned, breaking up the meat to avoid large chunks.

Stir in the onion, garlic, and bell pepper.

Add the sweet potatoes, diced tomatoes, broth, and both types of beans.

Bring to a simmer over medium heat. Continue to cook for 20 to 30 minutes, until the sweet potatoes are tender.
Depending on your tastes and dietary preferences, serve the chili with your favorite toppings such as sliced avocado, shredded cheddar cheese, sliced jalapeño, sour cream or plain Greek yogurt, and chopped cilantro.

Cooking with Adzuki Beans
If you can't find canned adzuki beans, you can try cooking 1 1/2 cups of adzuki beans. If you can't find adzuki beans, feel free to substitute kidney beans. While adzuki beans can be a little harder to track down, they lend a delicious rich flavor to this chili and deliver a host of health benefits. If you can find them, they're worth a try!
How to Cook Adzuki Beans
If using dried adzuki beans, combine 1 1/2 cups dried adzuki beans with 3 cups water in the insert of an electric pressure cooker. Cook on High pressure for 15 minutes. Let pressure naturally release for 10 minutes before manually releasing the remaining pressure.
