Beef Fried Rice
Prepare Ingredients
Start by prepping all your ingredients. Lightly whisk two eggs in a small bowl and set them aside. Dice half an onion, finely dice half a yellow pepper, and mince two cloves of garlic. Peel and dice carrots until you have 3/4 cup. Wash and slice 1/2 cup of mushrooms and slice 1/2 cup of green onions. Measure out the remaining ingredients so everything is ready to go.
Make Sauce
Whisk together the sauce ingredients in a medium bowl until fully combined, then set it aside for later.
Prepare Meat
Slice the meat thinly against the grain and place it in a small bowl. Toss the slices with 2 tablespoons of the sauce to coat, then set aside to marinate.
Cook Eggs
Heat some sesame oil in a wok over medium-high heat. Add the whisked eggs and cook, gently stirring until they are softly scrambled. Remove from the pan and set aside.
Cook Meat
In the same wok, heat some oil over medium-high heat. Sear the marinated steak for about 3 minutes on each side, then remove and set aside.
Cook Vegetables and Rice
Add more oil to the wok and cook the diced onions, peppers, and garlic for 2 to 3 minutes, until softened. Stir in the peas, carrots, broccoli, and mushrooms, cooking for another 1 to 2 minutes. Next, add the remaining sauce and chilled rice, increasing the heat to medium-high. Cook until the rice is browned and most of the liquid has been absorbed. Finally, lower the heat to medium, and add the beef, scrambled eggs, green onions, and spinach. Toss everything together and cook until heated through and the spinach is wilted, about 2 minutes. Serve immediately.

- 1 1/2 tbsp soy sauce or amino acids
- 2 tbsp oyster sauce
- 1 tbsp mirin or rice wine vinegar
- 2 tsp honey
- 1 tsp ginger paste
- 1/2 tsp sesame oil
- 1/4 tsp black pepper freshly ground
Scrambled Eggs
- 1 tsp sesame oil
- 2 eggs lightly whisked
Fried Rice
- 2 tbsp avocado oil or another neutral oil
- 3/4 lbs strip steak or skirt/flank/sirloin
- 1/2 yellow onion finely diced
- 1/2 bell pepper yellow, orange or red, finely diced
- 2 cloves garlic minced
- 3/4 cups frozen peas
- 3/4 cups carrots peeled, diced
- 3/4 cups broccoli florets frozen or fresh, diced
- 1/2 cup mushrooms button, shiitake or oyster, sliced
- 3 cups brown rice cooked, day-old
- 1/2 cup green onion sliced
- 1 cup spinach leaves

Instructions
- Add two eggs to a small bowl and lightly whisk together. Set aside.2 eggs

- Slice the meat against the grain into thin strips. Add to a separate bowl with 2 Tbsp of the sauce. Toss to coat and set aside.3/4 lbs strip steak
- Heat sesame oil for the eggs in a wok or large skillet over medium-high heat. Add whisked eggs and cook, stirring gently until softly scrambled. Remove to a plate and set aside.1 tsp sesame oil
- In the same pan, add 2 tsp oil for the fried rice. Once hot, sear steak slices for about 3 minutes per side. Remove to a plate and set aside.2 tbsp avocado oil
- Add 2 tsp oil to the pan again, and let it heat over medium heat. Once hot, add onions, peppers, and garlic, cooking for about 2 to 3 minutes until softened. Stir in peas, carrots, broccoli, and mushrooms. Cook for about 1 to 2 minutes until warmed through.3/4 cups frozen peas, 3/4 cups broccoli florets
- Stir in remaining sauce and chilled rice. Increase heat to medium-high. Cook until the rice is brown from the sauce and most of the liquid has been absorbed.3 cups brown rice
- Reduce heat to medium and add beef, eggs, green onion, and spinach. Toss to coat. Cook until heated through and spinach is wilted, about 2 minutes.green onion, 1 cup spinach leaves
