Instructions
 

Preparing the Salad

  • Set out the burrata to bring it to room temperature. This is crucial to getting the cheese to be the right consistency for the salad.
    1 lb burrata cheese
  • Wash and prep the produce. Thinly slice the basil leaves, zest the lemon, slice the peaches into wedges and cut the cherries in half.
    1/2 cup basil leaves, 1 tsp lemon zest, 1 1/2 lbs peaches, 1/2 lb sweet cherries
  • In a small bowl, vigorously whisk together the ingredients for the dressing until well combined.
    1/4 cup red wine vinegar, 1/4 cup olive oil, 1 Tbsp honey, 1/2 cup basil leaves, 1 tsp lemon zest, 1/4 tsp salt, 1/4 tsp black pepper
  • Add peaches, cherries, and dressing to a large bowl. Drizzle with enough dressing to lightly cover and toss to coat the fruit.
  • Let the fruit marinate for 30 minutes at room temperature.

Assembling the Salad

  • When it's reached room temperature, tear the burrata into pieces and arrange the pieces on a serving platter.
