Black glutinous rice, also known as black sweet rice, is essential for this dish because of its distinctive sticky texture and slightly sweet flavor. Unlike regular black rice, black glutinous rice becomes especially sticky when cooked, making it perfect for puddings. This type of rice has been a staple in Southeast Asian cuisine for centuries, particularly in Thailand, where it’s traditionally enjoyed as a dessert. The rice’s natural sweetness and rich texture are beautifully complemented by creamy coconut milk and the bright, tropical flavor of mango, creating a dessert that is both comforting and exotic.

These natural sweeteners enhance the pudding’s flavor, adding a gentle sweetness that doesn’t overpower the delicate tastes of the rice and mango.

RIPE MANGO
The fresh, juicy mango adds a bright, fruity contrast to the rich pudding, bringing a tropical sweetness and a vibrant color to the dish.

MINT SPRIG
A garnish of mint not only adds a pop of color but also a fresh aroma and a cooling taste, which balances the creamy, rich flavors of the pudding beautifully.
