Prepare Ingredients
Peel and dice one medium yellow onion. Peel and mince three cloves of garlic. Dice red bell pepper. Peel and dice 1 to 2 sweet potatoes. Drain and rinse black beans and adzuki beans. Prepare garnishes as desired. Set aside. Measure out remaining ingredients as listed.

Cook Beef
Add oil to a large pot over medium heat. Once hot, add ground beef, cooking until browned. Break up the meat so it doesn’t form large chunks as it cooks.

Sauté Vegetables
Stir in onion, garlic, and bell pepper. Continue to cook for another 5 minutes, stirring occasionally, until the vegetables are tender.

Simmer Chili
Stir in spices, sweet potatoes, diced tomatoes, broth, and both types of beans. Bring to a simmer over medium heat. Continue to cook for 20 to 30 minutes, until sweet potatoes are tender.

Cooking with Adzuki Beans 
If you can't find canned adzuki beans, you can try cooking 1 1/2 cups of adzuki beans. If you can't find adzuki beans, feel free to substitute kidney beans. While adzuki beans can be a little harder to track down, they lend a delicious rich flavor to this chili and deliver a host of health benefits. If you can find them, they're worth a try! 
How to Cook Adzuki Beans
If using dried adzuki beans, combine 1 1/2 cups dried adzuki beans with 3 cups water in the insert of an electric pressure cooker. Cook on High pressure for 15 minutes. Let pressure naturally release for 10 minutes before manually releasing the remaining pressure.
